Food for Thought: Head Chef Calvin's Top Dishes - 24th July 2024

We are very lucky at Test Valley Golf Club to have such a talented Head Chef, Calvin! Calvin has been with us for 2 years and golfers travel far and wide to sample his delicious food.

So, in this blog, we caught up with Calvin, to ask what his favourite foods are, to give you a flavour of what inspires him and what you can expect when dining at Test Valley Golf Club.

Top British Cuisine

Calvin said: “I think British home-cooked food ranks up there as some of the best meals. A good plate of fish and chips or a great pie and mash are simply delicious.”

Fresh Italian Specialities

Calvin continues: “I love cooking Italian food, using fresh ingredients to create simple dishes that are full of flavour. Food that is humble in nature but can be elevated with modern twists. A great pizza is a delight, with fresh dough, great sauce and simple toppings. When we put pizzas on the club menu, we use these principles as standard. Of course, a wood fired oven makes a difference to the taste, but a hot oven can produce good results.

Chicken Parmigiana is another dish I like and is a popular one amongst visiting golfers playing in societies.”

Amazing Street Food

Calvin adds: “Street food is another form of cooking that excites me, again taking humble ingredients and turning them into something amazing, served simply with no frills. On occasion, we try to incorporate such dishes in the club menu, being as authentic as possible in order to give our customers something different to try instead of the standard golf club fare”.
